Very similar to the Sugar Cookie Truffles, the Oreo Truffle Pops are simple, no bake and a delicious addition to any celebration. My favorite part is turning these into pops for an elevated look. Sprinkle with whatever decoration you want, either ground Oreos or sprinkles, and enjoy!
Newbie baker note: Thankfully this one is hard to mess up, but there is finesse to transferring the truffle from the melted chocolate to a tray without wasting a bunch of chocolate. Once I dip the ball into the chocolate, I let the excess drip off until it’s almost done, then stick the the pop into a styrofoam block to finish drying.
Place the cookies in a blender or food processor and blend until they have turned into fine crumbs.
Add in the cream cheese and vanilla and pulse until it has combined.
Line a baking sheet with parchment paper. Using a small cookie scoop or Tablespoon, scoop out the dough and roll into balls. Then place onto the baking sheet. Freeze for about 20 minutes, or until firm. Note: Keep the balls small so they are easier to coat in chocolate and later eat!
Melt the chocolate in a microwave bowl for 1 minute. Stir until smooth and melt for an additional 15-30 seconds if needed.
Stick the lollipop sticks into the truffle balls and dip into the chocolate. Tap the excess chocolate off, then flip so the lollipop stick can be stuck in a styrofoam board to finish drying.
Add sprinkles immediately after dipping each ball before the chocolate drys. Place in the refrigerator until ready to serve.
