Probably one of the easiest recipes out there, Sugar Cookie Truffles are a party favorite because they are little, pack all the deliciousness into one morsel and do not require any actual baking! Dazzle the chocolate coating with any of your favorite toppings – my go-to are sprinkles – to match whatever celebration you are taking these cuties to!
Newbie baker note: Thankfully this one is hard to mess up, but there is finesse to transferring the truffle from the melted chocolate to a tray without wasting a bunch of chocolate. I use two forks and wipe the excess off the bottom, lollipop sticks to make them like cake pops, or toothpicks so they are easy to take out after done dunking them in chocolate.
Place the cookies in a blender or food processor and blend until they have turned into fine crumbs.
Add in the cream cheese and vanilla and pulse until it has combined.
Line a baking sheet with parchment paper. Using a small cookie scoop or Tablespoon, scoop out the dough and roll into balls. Then place onto the baking sheet. Freeze for about 20 minutes, or until firm. Note: Keep the balls small so they are easier to coat in chocolate and later eat!
Melt the chocolate in a microwave bowl for 1 minute. Stir until smooth and melt for an additional 15-30 seconds if needed.
Dip the truffle balls into the chocolate using a fork. Tap the fork on the side of the bowl and then place back onto the lined baking sheet. Use a toothpick to help slide the ball off onto the pan.
Add sprinkles immediately after dipping each ball. Place in the refrigerator until ready to serve.
